3 eggs
1 c. vegetable oil
2 c. white sugar
2 c. grated zucchini
2 tsp. vanilla extract
3 c. all purpose flour
3 tsp. ground cinnamon
1 tsp. baking soda
1/4 tsp. baking powder
1 tsp. salt
1/2 c. chopped walnuts

Directions:
Directions:
Preheat oven to 325º.
Grease and flour two 8 x 4" loaf pans.
In large bowl, beat eggs until frothy.
Mix in oil and sugar.
Stir in zucchini and vanilla.
Combine flour, cinnamon, baking soda, baking powder, salt and nuts.
Stir dry mixture into egg mixture.
Divide into two pans.
Bake 60 - 70 minutes or until done.

Personal Notes:
For chocolate zucchini bread add 3 tbsps. baking cocoa and 1/2 c. semisweet chips to mix before dividing.
For pineapple zucchini bread, add one can crushed pineapple, drained to mix before dividing.
