5-8 lb. eye of round roast
32 oz. College Inn Culinary Broth (mixed broth) you can only get this broth at Publix
Garlic salt
Pepper
Carrots, celery, onions (optional)
Two packets of beef and mushroom gravy mix

Directions:
Directions:
Heat oven to 400º
Sear each side of roast in light olive oil to seal outside
Put roast in roaster and cover with broth and optional vegetables
Spice with generous portions or Garlic Salt and Pepper
Cook 2 1/2 to 3 1/2 hours depending on size of roast
Check after 2 hours, turn if necessary
After cooking, drain all liquid into pot and add two packets of Beef and Mushroom
Stir to make gravy and serve

This is a lean roast. Make sure it isn't drying out while cooking. If so, you can add burgundy wine and water to keep the liquid.
