Razor Clams-cleaned (the fresher the better)
Eggs, beaten (however many you need for your egg wash)
Ritz Crackers, regular kind (not low fat or low sodium) crushed. I use my blender enough to coat the clams
Butter, melted -may substitute spray Pam for lower calories but you do sacrifice some taste.

TURN ON BROILER ON HIGH. NEEDS TO BE HOT;
Dip the cleaned clams in the egg wash.
Coat well with crushed Ritz Crackers
Lay the clams out. single layer, on a greased baking sheet. (Line the sheet with foil makes cleanup easier)
Drizzle clams with melted butter, more or less to taste or spray with Pam. The less moisture you add the dryer your clams will be.;
COOKING;
Put pan on top oven rach under the HOT broiler.
Broil 3 minutes. Turn over. Broil 3 minutes and they are done. Avoid over cooking to prevent rubbery texture.
The KEY is a HOT broiler oven. You can do this in a HOT (500º) oven, without turning the clams over, But I;m not sure of the time. I prefer to use the broiler.
