4 green onions, chopped
1 small Spanish onion, chopped
1-2 cloves of garlic, finely chopped
1/4 c. butter
2 tsp. chili powder
1 tsp. cumin
2 tbsp. flour
1 1/2 - 2 c. chicken broth
2-3 potatoes (or sweet potatoes)
2 c. corn
1 red pepper, chopped
2 c. salsa
2 roma tomatoes, chopped (optional)
1 c. fresh or canned pineapple (optional)
1-2 lb. chicken (or turkey) pieces
8 oz. cream cheese

Directions:

Chop garlic and let sit for 10 minutes. Saute onions and garlic in butter. Add flour, seasonings and broth. Stir until thick. Pour into slow cooker. Add remaining ingredients and let simmer.

Half an hour before serving, take 1 cup of mixture and blend in cream cheese; then gradually add this to the chowder.
