Nanaimo Bars Recipe

(for bottom layer)
1/2 cup melted butter
1/3 cup cocoa
1/4 cup sugar
1 tsp vanilla
1 egg, beaten
2 cups graham crackers
1/2 cup nuts (your choice, and can be omitted)

***I like adding crushed pretzels for a salty contrast (roughly 1/2 cup, to taste and texture). Some people also use coconut flakes.

(middle layer)
1/4 cup butter
2 tsp vanilla custard powder/pudding
3 tbsp milk
2 cups icing sugar/powdered sugar

(top layer)
1 tsp butter
3 oz semi sweet chocolate

1. Mix together all ingredients for the bottom layer. Once combined, press into the bottom of an ungreased 8x8 inch pan.

2. For the middle layer, cream together butter, milk and custard powder until light and fluffy. Mix in the powdered sugar until smooth. Spread over the bottom layer in the pan. Chill to set.

3. While the second layer is chilling, melt the semisweet chocolate and butter together in the microwave or over low heat (or in a double boiler). Spread over the chilled bars. Let the chocolate set before cutting into squares.

This is a recipe from Christian's mom. She used to make it for him and his brother around the holidays. In her honor, Christian made them and served them at our wedding.

We tend to make them for Canada v. USA hockey matches :)

Because I like a good salty-sweet mix, I like to use pretzels in the base mix. Sometimes in addition to the graham crackers, sometimes in place of them. Many Nanaimo bars recipes also feature coconut (there are many versions of this rich Canadian dessert, so feel free to customize!).
