2-4 Chicken breasts
1 cup cooked spinach
2 tbsp butter
1 minced garlic clove
1/2 cup shredded cheddar cheese
1 egg
1 cup breadcrumbs
2 tbsp vegetable oil
Directions:
Directions:
Preheat oven to 325º
Flatten chicken breasts
Stuff chicken with spinach, butter, garlic and cheese
Roll and fasten with toothpicks
Dip into egg to moisten the chicken
Roll in breadcrumbs
Heat the oil in a pan
Brown the chicken in the oil on both sides
Put in a covered oven safe dish
Bake in oven 30 minutes or until cooked thoroughly
