8 cups of red potatoes
4 cups chopped and peeled parsnips
1 rutabaga, peeled and chopped
1 onion, chopped
3 T. salt
8 oz. cream cheese, softened
1 stick butter
freshly ground pepper

Directions:
Directions:
In large dutch oven combine potatoes, parsnips, rutabaga, onion, and 2 T. salt to water and bring to a boil. Reduce heat to medium low and simmer 10-12 min. or until tender; drain. Add remaining salt, cream cheese, butter and pepper, then mash together.
