3/4 Stick of butter
1 C. Chopped onion (1/2 white & 1/2 purple)
1 C. Chopped celery (finely chopped)
1 C. Grated carrot
1/4 C Flour
2 T. Corn Starch
4 C. Milk
4 C. Chicken broth
1/8th tsp Baking soda
Velveeta Cheese - 3/4 of large box
1/2 tsp Pepper
1 T Parsley (finely chopped)
10 ozs Chopped Broccoli, Steamed (chop again)
1 Can Original Rotel Tomatoes

Directions:
Saute onion, celery, and carrots until tender. Add flour, stirring to brown slightly...browing adds good flavor. Add cornstarch, milk, and broth. Heat on medium heat until just beginning to bubble---stirring very often so not to scorch. Add baking soda, grated Velveeta, and stir constantly until cheese is melted. Add salt, pepper, parsley, and chopped broccoli. Stirring continually, then add Rotel Bring back to a gentle bubble, still stirring, then let simmer on low to med. low for 20 minutes. I use a wood flat stirring kitchen tool that really scrapes the bottom of the stock pot. Again...watch carefully.
