2 eggs
1 c milk
1 c flour
1 t sugar
1/4 t salt
2 t baking powder
1/4 c oil

Directions:
Directions:
Preheat your waffle iron. Separate eggs and whip the whites until they form soft peaks. In a bowl, blend yolks, milk, flour, sugar, salt, and baking powder. Add oil, making sure not to over mix. Fold in egg whites with a whisk. Lightly oil or spray waffle iron, then pour in about 1/2 cup of batter. Close iron and cook 2-3 minutes, according to iron instructions. Repeat until batter is used up.
