2 c. flour
1 c. brown sugar
3/4 c. melted butter
1/2 c. quick oatmeal

Filling:
2/3 c. sugar
3 T. cornstarch
1 1/4 c. water
3 c. diced, peeled, tart apples
1 tsp. vanilla

Directions:
Directions:
Combine flour, brown sugar, melted butter, and quick oats; set aside 1 c. for topping Press remaining crumb mixture into an ungreased pie plate; set aside. For filling, combine sugar, cornstarch and water in a sauce pan until smooth; bring to a boil. Cook and stir for 1 min. or until thickened. Remove from heat and stir in apples and vanilla. Pour into crust; top with reserved crumb mixture. Bake at 350º for 40-45 min. or until crust is golden. (** I set timer for 35 min. and check it!)
