Onion, chopped
Water
3-oz. tomato paste
1/2 - 1 c. peanut butter (natural, creamy or chunky peanut butter can be used)
1/4 - 1/2 tsp. nutmeg
Salt and pepper to taste
Hot pepper (Liberians like to use)

Variations: Add:
2 tomatoes, cut up
small eggplant, cubed
summer squash or zucchini, cubed

Directions:
Directions:
Cut up, skin and stew chicken until done (about 45 min.) Cook with chopped onion and enough water to almost cover chicken pieces.

When chicken is done, remove from stock, cool, then strip meat from bones. Save stock.

In medium saucepan, put 2 cups of stock, tomato paste, add 1/2 - 1 cup peanut butter until consistency you want. Add 1/4 - 1/2 tsp. nutmeg, salt and pepper to taste. Add chicken; heat through. Liberians like to use hot pepper.

Serve over rice.
