1 onion (finely chopped)
3 garlic cloves (minced)
Mushroom 8-12oz (washed,finely chopped)
3 carrots shredded
1 can black beans (liquid removed)
4 tablespoons tomato sauce
1 tablespoon smoked paprika
salt & pepper to taste
1 teaspoon cumin
2 tablespoons Spanish olives (stuffed w red peppers)
2 tablespoons raisins
Olive oil

Directions:

Sauté onions in medium heat for 5 minutes in a few tablespoons of olive oil. Then add the minced garlic and cook for an additional 3 minutes, stirring occasionally and making sure it does not burn. Add the tomato sauce, cumin, smoked paprika, and Spanish olives to the mixture and continue cooking for a few minutes. Now add the carrots, beans, and raisins, and mix well and continue cooking. Finally add the mushrooms and cook for 3-5 minutes. As you cook this taste, and adjust the seasoning.

Here we have an adaptation of the traditional Picadillo minus the ground beef, plus some carrots for added nutrition, and volume. Recipes are meant as just a guide, with you having the final say on quantities depending on how much you like garlic, and other spices. You can eat this with quinoa, rice, tacos, or in any dish that you would use ground beef.
