3 1/2 lb chicken, cut into serving pieces
2 tbsp butter
1 tbsp olive oil or vegetable oil
1 onion finely chopped
1 clove garlic, crushed
3 tbsp flour
1 c white wine
1 c chicken broth
1 tbsp tomato paste
2 ripe tomatoes, peeled, seeded and chopped
1/2 tsp basil
1 bay leaf
1/4 tsp salt
2 tbsp parsley, finely chopped
freshly ground black pepper

Directions:
Directions:
Brown chic.ken in combined butter and oil. Transfer chicken pieces to a casserole dish. In the same skillet, saute onion and garlic for 3 minutes until softened. Stir in flour and add wine and chicken broth gradually. Add tomato paste, tomatoes, basil, bay leaf, salt and pepper. Cover and cook for 45 minutes at 350º. Garnish with parsley.
