1 to 1 1/2 c. MAHATMA extra long grain enriched rice
2 1/2 in water
2 cinnamon sticks
1 scant tsp. salt
1-2 qts. milk
sugar to cover top of rice
cinnamon for top of rice

Directions:
Directions:
Cook this in a heavy pan. Rinse rice in water and pour off until clear. Leave rice in pan and add about 2 1/2 inches of clear water. Cook rice, 2 cinnamon sticks, and 1 scant tsp. salt, until water is gone. Add 1 qt. milk- use more than 1 qt. but start off with 1 qt., stir every so often. Keep stirring and adding milk cooking rice slowly for at least an hour and a half until rice is cooked but looks runny. Cook on low. Pour into bowl and sprinkle sugar and cinnamon on top.
