5 lg. potatoes
2 -3 tbsp. diced onion
2 hard cooked eggs, chopped
1 c. Miracle Whip (can use mayo)
1/2 c. sugar
scant 3 tbsp. vinegar
1 tbsp. mustard
3 tbsp. sweet pickles, chopped
salt and pepper

Peel and cube potatoes. Place in a large pot, add onions and salt - at least 1 tsp. Cook until tender. Drain off water. While potatoes are cooking, in a large bowl, combine the Miracle Whip, sugar, vinegar, eggs, mustard, pepper and sweet pickles. I use my homemade sweet lime pickles, but I think a pretty good substitute is the Dillons/Kroger brand called "Candied Pickle Sticks". I usually add a little salt to the eggs. While the potatoes are still hot, pour them into the dressing and mix well. Refrigerate 2 hours or overnight is even better.
