3 c. whole wheat flour
4 tsp. baking powder
1 tsp. salt
1/2 c. butter, softened
1 c. brown sugar (or a little less: 3/4 c)
3 eggs
2 tsp. vanilla
1 1/4 c. milk
1 c. roasted, unsalted peanuts, coarsely chopped

Directions:

Coat a loaf pan with cooking spray. Preheat oven to 350 degrees.
Combine flour, baking powder and salt. set aside. In a large mixing bowl, cream butter and brown sugar. Add eggs and vanilla. stir well. Alternately add the flour and milk and mix until combined well. Fold in peanuts.
Spread evenly in loaf pan and bake 60-70 minutes. Allow to cool in pan for 10 minutes, then turn out and cool on wire rack.
