1 large yellow onion, sliced
1 large can diced tomatoes
1 tsp garlic, crushed
4 cups fresh green beans, cut in 1 inch pieces
2 cups chuck roast, cut in bite sz pieces
Salt and pepper

Directions:
Directions:
Saute garlic in 1 Tbsp oil. When garlic begins to brown, add tomatoes and onions. When tomatoes and onions have cooked down, add beef. Mix well. Add salt and pepper. Add just enough water to cover beef. Boil, mixing occasionally until beef is tender. Usually takes about an hour. May add beef bouillon for flavor. Add fresh green beans. You don't want to over cook the beans. They should be a little crispy.
Of course, you serve this with steamed rice.

This is a recipe from Joe's mom. She interchanges Sitao (Chinese green beans) or Bokchoy to give it a different flavor. We like regular green beans the best.
