6-8 red or green bell peppers
1 lb ground beef
1/2 lb ground pork or chicken
6 cloves garlic
3 c. marinara or spaghetti sauce (reserve 1 cup)
3 T oil
1 lg onion
1/2 cup flavored bread crumbs
3/4 c. parmesan cheese
2 med eggs
1 T italian seasoning
2 tsp. fennel seeds
salt and pepper to taste

In a lg saucepan or frypan, saute garlic and onion in oil until just golden. In a separate bowl, combine meats, spices, salt and pepper, eggs, and cheese. When garlic and onion are done, pour carefully (hot) into meat mixture and mix. Cut bottoms off peppers so they'll sit flat in a 9x12 baking dish. Be sure not to cut through the pepper or it will leak. Stuff each pepper with enough mixture to fill to top. Pour 2 cups of sauce over peppers and top with mozzarella. Bake at 350 for about 1/2 hour to 45 minutes or until filling is hot. Serve with the remaining sauce.

If you're short on time, you can precook the peppers in the microwave for about 3-5 minutes and cook the filling for about 10 min. before stuffing the peppers. Then you only have to bake for about 20 minutes.
