3 eggs
1 c. granulated sugar
2/3 cup pumpkin
1 tsp. lemon juice
3/4 c. flour
2 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. baking powder
1 tsp. ginger
1/2 tsp. salt
1 cup chopped nuts (optional)
2 c. powdered sugar
8 tbsp. butter or oleo
8 oz. cream cheese
1 tsp vanilla


Directions:

Beat eggs on high speed of mixer for 5 minutes; gradually beat in 1 cup granulated sugar. Stir in 2/3 cup pumpkin and l teaspoon lemon juice. Sift together flour, cinnamon, nutmeg, baking powder, ginger and salt. Fold into pumpkin mixture. Spread in greased and floured 15 x 10 x 1 inch pan. Top with 1 cup chopped nuts (optional). Bake at 375º for 15 minutes. Turn out on towel, sprinkle with powdered sugar. Starting at narrow end, roll towel and cake together; cool, unroll. Combine powdered sugar, cream cheese, butter or oleo and vanilla. Beat until smooth. Spread over cake, roll and chill.
