1 leg of lamb (6 to 7 lb.)
olive oil
lemon juice
1 tbsp. dried parsley flakes
1 tsp. dried basil
1 tsp. dried rosemary, crushed
1 tsp. pepper
3 - 4 cloves garlic, finely chopped

Directions:
Directions:
Preheat oven 325ºF. Trim fat from meat. Cut 2 inch long slatches into meat. Rub olive oil and lemon juice all over the meat. Combine parsley flakes, basil, rosemary and pepper together. Sprinkle over the meat. Insert chopped garlic cloves into the slatches. Place aluminum foil in bottom of roasting pan, (this just makes life easier). Place meat, fat side up, on a rack in the roasting pan. Cover. Roast for 3-4 hours for well done or until inserted meat thermometer reads 170º. Let rest for 15 minutes before carving. If you prefer rare (140º), or medium (160º), adjust time accordingly.

It is important that you use a rack for roasting, as you don't want the
