12 slices bread, with softened butter
1 1/3 cup diced cooked chicken
1 1/3 cup diced cooked ham
1/2 cup diced celery
1/2 cup crushed pineapple, well drained
1/3 cup mayonnaise
3 tbsp finely chopped pecans
1 1/2 tbsp chopped green peppers
1 tsp thin slices green onion tops (green part)
1/4 tsp salt (if ham is salty, omit this)
Dash of pepper
6 slices mozzarella cheese

Directions:

Butter bread on one side. Mix ingredients, except cheese. Divide mixture evenly on unbuttered side of six bread slices. Top each with slice of cheese. Close sandwiches with remaining bread, buttered side out. Grill on both sides until cheese starts to melt and sandwiches are golden.

This is a recipe from David's grandma, Thelma Bierschank. She made these once, and I still think about them. They were so good. Lot of dicing involved, so a food processor is a good idea. A very hearty sandwich. Could be a good use for holiday leftovers, when you're tired of just ham. Thelma was a rancher's wife, and was an excellent cook.
