1/4 cup of flour
1 cup milk
1 cup grated Monterrey Jack cheese
3 eggs
2 4 oz cans whole chiles (I use Old El Paso.)
1 cup grated cheddar cheese

Directions:
Directions:
Open chiles and scrape seeds out. Put one can of chiles in bottom of buttered casserole dish. Sprinkle one cup of Monterrey Jack cheese over the chiles. Layer second can of chiles on top of Monterrey Jack cheese. Sprinkle one cup of cheddar cheese over the second layer of chiles. Mix milk, flour and eggs together. Pour over cheese and chiles. Bake in a preheated oven at 350 degrees for 25 minutes.

Not sure where my mom got this recipe, but she used to make it all the time. It turns out basically like a quiche. Kind of spicy, and we've had it for breakfast or dinner.
