1 Potato per person

Toppings:
Cheese, bacon bites, green onions, chives, parsley paprika, garlic salt, and pepper, sour cream, Ranch dressing, salsa. Whatever is your favorite potato topping!

Preheat oven to 425°F.
Make a vertical cut lengthwise in the potato and microwave on high for 10-12 minutes until tender. Turnover at the half way time (5-6 minutes). Use the vertical cut to completely cut the potato in half. Scoop out ¾ of the inside meat and set aside. Lightly brush vegetable oil or canola oil over the skins.
Spray cooking spray on baking sheet and place the skins in the preheated oven. Bake for 20 minutes. While the skins are baking, mash the flesh until smooth. Scoop the flesh back into the skins, top with cheese, onion, bacon, paprika, garlic salt and pepper. Put under the broiler until cheese is bubbly. Serve topped with sour cream (optional)
