vegetable oil, for frying
1 c. sugar
2/3 c. light corn syrup
1/3 c. butter
2 large eggs
1-1/2 c. chopped pecans
1 tsp. vanilla extract
1/8 tsp. salt
Flour for dusting
1 pkg. premade pie crust
1 egg yolk, beaten
confectioners' sugar

In dutch oven or deep fryer, heat the oil over medium heat 350º
In a medium saucepan, combine the sugar, corn syrup, butter and eggs. Stir in the pecan, vanilla and salt. Bring to a boil over medium heat, reduce the heat and simmer 10 minutes.
On lightly floured surface, unroll pie crust. Cut out rounds using a 41/2 in. cutter. Reroll dough as needed. Repeat the procedure with the remaining dough. Place one circle of dough on a clean, flat surface. Lightly brush the edges of the crust with the beaten egg yolk. Place 1 heaping Tbsp. of pecan mixture in the center of the round. Fold the dough over the filling, pressing the edges with a fork to seal. Repeat with the remaining rounds and pecan mixture. Fry pies in batches until lightly browned, 1 to 2 min. per side. Drain on paper towels. Lightly dust with confectioners' sugar, if desired. Don't have the right cutter? I used a small tupperware bowl.

If you don't like pecans use any pie filling.
If you don't eat fried food you can bake them in the oven 450 degrees for about 10 min. until light brown. You can also use puff pastry.
If you are frying and don't a thermometer place the handle of a wooden spoon in the oil if it has bubbles around the handle it is ready to fry.
