Ingredients:
Ingredients:
1 large onion, chopped
1 large bell pepper, chopped
2 ribs of celery, chopped
3 tablespoons olive oil
2 14.5 oz cans of diced tomatoes
3 tablespoons Gumbo File
4 bay leaves
2 tsp ground coriander
1/2 tablespoon red pepper flakes
1 1/2 tablespoons Tony Chachere's Cajun Spice
1 tablespoon garlic
3 cups of rice (we have been using Uncle Ben's brown rice [dry] for a healthier version)
6 cups of water
1 1 lb tube lite pan sausage
4 large links of sausage, sliced thin
(we use Butterball Turkey links to make this healthier, but we use Earl Campbell's Hot links if we're not watching the calories. Since Earl's are shorter than average links we use about 10)
2 cups frozen peas and carrots (optional)
