Make only if you can find "Mochiko" (Japanese Rice Flour) Super Easy) Measure, mix and bake.

1/2 C. Butter, melted and cooled
1 1lb. Box Mochika (Rice Flour)
2 1/4 C. Sugar
1 t. Baking Powder
3 C. Milk: 1 10oz can coconut milk and remainder in regular or low-fat Milk to make 3 C)
5 Eggs, beaten
1 t. Vanilla
1 C. finely shredded Coconut, if desired

Preheat oven to 350º Melt Butter, cool. Combine Mochiko, Sugar and Baking Powder. Combine remaining ingredients and stir into Mochiko mixture, mix well. Pour into a 13
X 9 pan. Sprinkle coconut over top if using. Bake for 1 hour, cool and cut in 2" squares,
