2 cans (15oz) black beans, rinsed and drained
4 green onions, thinly sliced
2 plum tomatoes, seeded and chopped
1 medium red onion chopped
1 large red pepper, chopped
Dressing:
2 tbsp olive oil
2 tbsp red wine vinegar
1 tbsp lemon juice
1/2 tsp salt
1/4 tsp pepper
3/4 tsp minced fresh basil or 1/4 tsp dried basil

Directions:
Directions:
In a salad bowl combine beans, green onions, tomatoes, red onions and red peppers. Whisk dressing ingredients together in small bowl. Pour over vegetables and toss to coat. Cover and refrigerate 1 hour before serving.
Makes 6 servings.
