1/2 cup plus 2 Tbs cornstarch, divided
3/4 cup water, divided
2 egg yolks
4 boneless chicken breast (halves)
2 cups corn oil
3 Tbs light brown sugar
1 Tbs fresh ginger (minced)
1 cup chicken broth
1/3 cup fresh lemon juice
1/2 cup green onions (cut in 1" pieces)

Directions:
Combine 1/2 cup cornstarch, 1/4 cup water and the egg yolks; whisk until smooth. Add chicken, coating each piece thoroughly. In a skillet, heat oil until hot. Fry chicken breasts until golden. Set aside and keep warm. In a saucepan, place remaining 2 tablespoons cornstarch, brown sugar and ginger. Stir in remaining 1/2 cup water and the broth. Cook over heat, stirring, until thickened and comes to boil ( 1 minute). Remove from heat; stir in lemon juice. Cut each chicken breast in to 4 pieces. Arrange on pretty plate and pour sauce over the chicken and top with onions.
