Corned beef, thinly sliced (leftovers from the corned beef and cabbage)
Rye bread, thin sliced, no seeds
Sauerkraut, drained and patted dry on paper towels
Swiss cheese, sliced
Thousand Island dressing or Russian dressing
Butter

Directions:
Directions:
Using a cast iron skillet or heavy griddle, butter one side of 2 pieces of rye bread. Spread dressing on other sides.

On first slice on the dressing side, add a slice of Swiss cheese, add slices of corned beef, add dry sauerkraut, add another Swiss cheese slice. Cover with 2nd piece of bread on dressing side.

Grill with butter side down until brown. Flip and grill other side until cheese is melted

Note: If corned beef is cold, heat in microwave briefly, 30 seconds until warm. Also, make sure sauerkraut is thoroughly dry or the sandwich will be soggy.
