Ingredients: 4 boneless, skinless chicken breasts, pounded 2 limes 1 slice of Monterey Jack with jalapeņos for each breast 1/2 bottle of liquid Margarita mix, including liquor Salt and pepper to taste 12 tortillas 1/4 cup vegetable oil

Directions:Fork pounded chicken breasts and marinate overnight in margarita mix and freshly squeezed lime.
Remove from marinade and grill, basting regularly with marinade. Just before chicken is done, add a slice of cheese and let it melt.
Either before grilling or the previous evening when preparing the marinade, thinly slice the tortillas into straw strips. Fry in hot oil until crispy. These will keep for several days without refrigeration in a zip lock bag and are to be used as the bed on which to place the chicken breasts. Heat in microwave for 1 minute prior to serving. |
