Buttermilk Cornmeal Mix (prepared according to package)
Leftovers: cabbage, roast beef, collards, corned beef, etc.

Directions:
Prepare cornbread according to the package directions. (White Lily® Buttermilk Cornmeal Mix is a good choice)

Fill muffin tins ¼ - ½ full, do not fill to capacity (I use large muffin tins).

Add two tablespoons of roast beef and two tablespoons of collard greens(or any cooked food combination).

Pour remaining batter on top of each muffin tin (be careful not to fill to capacity).

Bake in 350º oven until golden brown. These are very delicious!

Like most recipes, this one can be tweaked to your taste, try different food combinations: corned beef and cabbage, bacon and corn, the possibilities are endless.
