Ingredients: 8 oz. Spinach tagliatelle or pasta of your choice 2 oz. butter 4 Fresh sage leaves 2 Garlic cloves, peeled and minced 8 oz. Smoked salmon, cut in thin strips 2 oz. Shelled pistachio nuts ¼ Cup fresh lemon juice ¼ Cup whiskey 8 oz. mascarpone cheese or cream cheese Fresh ground black pepper, to taste Total time: 15 minutes, 10 minute prep

Directions:This makes a quick yet elegant main course with rich flavors. The mascarpone cheese can be substituted with cream cheese or with cream (cook it down for a few minutes after adding to reduce, achieving the proper consistency for the sauce). DO NOT leave the pistachios out; they are integral to the dish! 1. Heat the water for the pasta as per directions on box. While pasta is cooking, prepare the sauce. 2. In a large frying pan, sauté the sage in the butter; when it begins to be fragrant and turn color, remove and discard. 3. Add the garlic to the pan, and sauté for 30 seconds. 4. Add the salmon to the pan, add nuts and cook for 30 seconds (the salmon will breakdown in to small pieces). 5. Add the lemon juice and the whiskey, and cook for another minute. 6. Add in the mascarpone cheese and stir well until it melts and is completely incorporated with the other ingredients. 7. Add ground black pepper to taste. 8. Add the hot cooked pasta to your pan and mix well into the sauce. 9. It is now ready to serve! |
