Crock Pot Potato soup Recipe

5 pound bag coarsley chopped and peeled potatoes
1 small onion chopped into small pieces
1/2 lb sliced bacon crisp cooked, drained and crumbled (I used 4 heaping T of real bacon bits)
1 8oz pkg light cream cheese, softened
3 14.5 oz can reduced sodium chicken broth (I used 2 bouillion cubes and 2 sodium free cubes)
1 10.75 oz can of 98% fat free cream of chicken soup
1/2 tsp of white pepper

Toppings:
shredded cheddar cheese
chives

Directions:
Directions:
Stir together potatoes and onion in crockpot. Mix in bacon. In a large mixing bowl, combine the cream cheese, chicken broth, cream of chicken soup and pepper. Add the mixture to the potatoes in the crock pot. Cover and cook soup on low heat or 8-10 hours, or on high 4-5 hours.

Mash potatoes slightly for a thicker consistency before serving.

Sprinkle a little bit of chives and/or grated cheese on top of each serving for more cheesy goodness.
