1 lb lean ground beef
1/2 c onions
20 corn tortillas
1 packet taco seasoning
12 oz shredded cheese
1 large can Hormel chile (no beans)

Directions:
Directions:
Cook ground beef and season to your taste. Lightly fry tortillas in grease pan until they are soft. Place cooked ground beef, onions and cheese in tortillas and roll into tube shape. Place rolled tortillas in a lightly greased pan in rows. Top with Hormel chile, add more onions and shredded cheese to your taste. Place pan in oven for 30-45 minutes (cover with aluminum foil for a soft enchilada)

May substitute ground turkey or chicken for beef. Good with mexican rice or beans.
