1 c skim milk
1 tbsp all purpose flour
1 onion chopped
2 whole cloves
1/4 tsp grated nutmeg
1/4 tsp black pepper
6 c spinach (fresh, clean)
1/4 grated parmesan cheese
1 lb ready pizza dough (cold)
3 large plum tomatoes
2 c part-skim shredded mozzarella

Preheat oven to 450º. Spray pizza pan with non-stick cooking spray.
In large non-stick sauce pan, combine 2 tbsp milk with flour, stir until smooth. Stir in remaining milk, onion, cloves, nutmeg and pepper. Cook over medium heat and discard cloves. Add spinach and parmesan cheese, stir until spinach is moistened and slightly wilted.
Press pizza dough onto bottom of pizza pan and pinch edges to form crust. Spread spinach sauce over dough evenly. Bake until crust is browned and cheese is golden, about 12-15 minutes.
