1 large fryer or equivalent chicken breasts
1 8 oz. pkg. lasagna noodles
1 1/2 c. cottage cheese
1 lb. cheddar cheese
Parmesan cheese
1 can cream of mushroom soup
2 cans cream chicken soup
2 cans sliced mushroom (or fresh sauteed)
1 small onion, chopped
1 small pepper, chopped
1 small jar pimentos, chopped (optional)
3 T. butter

Directions:
Directions:
Boil chicken in seasoned water until done. Remove bones and skin and cut into bite-sized pieces. Set aside. Saute onions and pepper in butter until soft. Add mushrooms and cook a little longer. Add pimento and soup plus one can of water to make sauce consistency. Simmer 30 minutes. In large 9x13 buttered baking dish, make layers in the following order, sauce, uncooked noodles, chicken, sauce, cottage cheese, cheddar cheese (shredded), and Parmesan (sprinkled on top). Repeat layers. Cover and bake 45 minutes at 350º. Uncover, and continue to bake 10 more minutes. Allow to set 15 minutes before cutting.
