1 lb. large shrimp, peeled
1 medium onion, chopped
1 medium bell pepper, chopped
6 tbsp. garlic, minced
2 tbsp. Italian seasoning
1 (16 oz.) can diced tomatoes
Salt and pepper to taste
Olive Oil

Directions:
Directions:
Cover bottom of skillet with olive oil. Saute onion, bell pepper and garlic until onion is transparent. Add tomatoes, Italian seasoning, salt and pepper.

Simmer for 10 minutes or until tomatoes are soft. Add shrimp and saute until shrimp is pink.
