Ingredients: 1 tbsp. extra-virgin olive oil 4 slices lean, smokey bacon finely chopped 2 lbs. ground sirloin 1 large onion, finely chopped 3 cloves garlic, finely chopped 4 tbsp. chili powder Salt & Pepper to taste One 15 oz. can tomato sauce (or if you prefer use one 15 oz. can of diced tomatoes) 5 Mushrooms sliced thin 1/3 cup Worcestershire sauce 1/4 cup dark brown sugar 2 tbsp. hot sauce (Texas Pete is the best) 2 cups beef stock (low sodium) Sour Cream for the topping 1/2 cup finely chopped flat-leaf parsley for the topping

Directions:In a large pot or Dutch Oven, heat the olive oil over medium heat. Add the bacon and cook until the fat renders (about 2 minutes). Add the ground sirloin and cook until browned (8-10 minutes). Add the onion and cook until softened (5 minutes). Add the garlic, chili powder and salt and pepper to taste.
In a bowl mix together the tomato sauce (or diced tomatoes), Worcestershire sauce, brown sugar and hot sauce. Stir into the chili. Stir in beef stock and add the mushrooms. Bring to a boil, then lower heat and cook until thickened (6-7 minutes).
Top with sour cream and parsley |
