3 8oz blocks of mozzarella cheese or any hard cheese of choice
1 8.5 oz jar of sun dried tomatoes in oil (drained)
½ cup of olive oil
3 T of chopped fresh parsley
1 T of chopped or dried basil
1 tsp garlic powder
1 tsp onion powder
1 tsp Italian seasoning
1 garlic clove—finely minced
¼ tsp salt
¼ tsp pepper

Directions:

1. Cut block of cheese into 1 inch cubes. Arrange cheese cubes and tomato halves in a baking dish or gallon zip lock bag.
2. Whisk together olive oil and next 8 ingredients pour over cheese and tomatoes. Cover and chill at least 8 hours or up to 24 hours.
3. Place cheese on serving platter. Drizzle with marinade.
4. Place tomato on top of cheese cube and spear with short rosemary stems or decorative toothpicks.
