3 cups potatoes, cut in small pieces
2 cups water
1/2 cup chopped celery
1/2 cup carrots, sliced fine
1/4 cup onions
1 tbsp. parsley
Salt and Pepper to taste
1 chicken bouillon cube
1 1/2 cups milk
2 tbsp. flour
2 cups Velveeta Cheese cubes
Croutons, optional

Directions:
Directions:
In a sauce pan, place potatoes, water, celery, carrots, onions, parsley, salt and pepper and bouillon cube. Cook for about 20 to 25 minutes. Mix flour into milk and add to soup to thicken. When heated, add Velveeta cheese cubes. Stir until cheese is melted. Add croutons and serve piping hot.

Personally, I do not like bouillon cubes. Seems they take forever to melt. I found "Better Than Bouillon" base. It's wonderful! It comes in chicken and beef, but also seafood and ham. Great flavor.
