16 T butter, at room temperature
11/2 cups sugar
1/4 glucose
1 egg
1/4 tsp vanilla extract
2 oz 55% chocolate melted
11/4 cups flour
3/4 cups cocoa powder (preferably Valrhona)
3/4 tsp baking powder
1/4 tsp baking soda
13/4 tsp kosher salt
1/2 recipe chocolate crumb recipe

Directions:

Cream together butter, sugar and glucose for 2-3 minutes. Scrape down sides and add egg, vanilla and melted chocolate. Beat for 7-8 minutes.

Reduce the mixer speed to low and add the flour, cocoa, baking powder, baking soda and salt. Mix just until the dough comes together, not more than 1 minute. Scrape down sides.

Still on low speed add the chocolate crumbs and mix just until incorporated about 30 seconds.

Using a 2 3/4 oz ice cream scoop or a 1/3 cup measure. Portion out the dough onto a parchment lined sheet pan. Pat the tops to flatten. Wrap the pan tightly in plastic warp and refrigerate at least 1 hour or unto 1 week. Do NOT bake cookies from room temperature, they will not bake correctly.

Heat oven to 375º. Arrange the chilled dough minima of 4 inches apart on parchment paper. Bake for 18 minutes. Cookie will puff, crackle and spread. GIve an additional minute if too doughy but no more.

Cool completely.
