1 1/2 lbs. carrots, sliced
3/4 cup butter
2 eggs
1/4 cup all-purpose flour
1 1/2 tsp. baking powder
1 1/4 tsp. granulated sugar
1/4 tsp. ground cinnamon

Directions:
Directions:
Preheat oven to 350º.

Lightly grease 1 1/2 qt. dish; set aside. Cover carrots in water and boil for 15 minutes or until tender. Drain.

In a food processor, combine the carrots, butter, eggs, flour, baking powder, sugar and cinnamon. Process until smooth, stopping once to scrape down the sides. Spoon into prepared dish.

Bake about 1 hour or until set and lightly browned.
