5 large baking potatoes
1 stick butter or margarine
1 large container of sour cream
1 8oz. shredded sharp cheddar cheese
1 bunch of scallion onions
1 teaspoon salt
1 teaspoon pepper
1/2 cup milk
Olive oil

Directions:
Directions:
Wash the potatoes and punch a number of holes for air to escape. Coat the potatoes with olive oil and salt generously. Bake the potatoes for 80 minutes on 425º.

Allow to cool to touch and cut the potatoes lengthwise. Core out inside of potato content into large mixing bowl. (optional - put potato skins back in over to harden).

Mix potato, salt, pepper, sour cream, butter, 1/2 of available cheese and milk together to the consistency of mashed potatoes. Put mashed potatoes back into potato skins and top with remaining cheese. Bake at 450º until cheese has melted.
