2-3 lbs. boneless beef chuck
½ lb. butter or margarine
¼ cup cognac (optional)
1 carrot quartered and cut into 2 ½ inch sticks
3 carrots, grated
2 onions, diced
3 bay leaves
1 ½ tsp. ground thyme
1 tsp. salt
¼ tsp. pepper
2 cups dry white wine (I use Chablis)
1 lb. fresh mushroom, halved
16-20 small onions (1 inch in diameter)

Trim off excess fat. Cut into 1 inch cubes. Brown beef in butter in heavy casserole or Dutch oven. If desired, heat cognac, ignite and pour over beef (I don’t do this but it would add a lot).
