1 rack of St. Louis ribs (for 2 people) (you can use babyback ribs if you can't find St. Louis)
1/2 box salt
1/2 box granulated sugar
2 cups of water
Jar of your favorite rub
Your favorite barbecue sauce

Directions:
Directions:
Brine ribs in an Igloo cooler. Fill cooler with 1/3 water and add salt and sugar, stirring well until dissolved. Let stand overnight. Does not need refrigeration.

Remove ribs from brine. Pat dry with paper towels. Rub pork rub generously on front and back.

Preheat oven to 275º.

Place ribs on rack in broiler pan and add 2 cups of water to pan. Cover with aluminum foil and place in oven for approximately 2 hours. When the pork has receded on the bone for about 1/8", remove the ribs and place on outdoor grill for the final 30 minutes of cooking. Baste with barbecue sauce when grilling.
