Chuck Roast
1 can Beef Broth
1/2 cup Water
2 tbsp. Balsamic Vinegar
4 large carrots chopped in large chunks
6 celery stalks chopped in large chunks
1 onion sliced

Directions:
Directions:
Brown all sides of beef well in olive oil and season with salt and pepper. Add beef broth, water and balsamic vinegar. Put into a Dutch Oven and add the vegetables. (no potatoes) Oven should be at 275º and cook for 4 hours.
Gravy: 8 tbsp. butter and flour sautéed together. Add some of the broth slowly until it's to your liking.
