1 t vegetable oil
1/2 c uncooked long grain converted white rice
1/2 c chopped onion
1 garlic clove, minced
1/2 c diced tomato
1 c defatted chicken stock or canned broth
1/2 t cayenne pepper
1/2 t ground cumin
1/4 t Mexican oregano
1/8 t salt
1/8t black pepper

Directions:
Directions:
In a small heavy saucepan, cook the rice in the oil over moderately high heat, stirring constantly, until the rice is golden, 3-4 minutes.
Add the onion and garlic and cook another minutes stirring constantly.
Add the tomato and cook until heated through.
Add the stock, cayenne pepper, cumin, oregano, salt and pepper.
Bring to a boil.
Reduce the heat to low.
Cover tightly and simmer until rice is tender and liquid is absorbed, about 15 minutes.
