2 tablespoons olive oil
1 1/2 pounds cooked shredded pork (leftover roast is ideal)
1 medium onion, chopped
4 to 6 large fresh chopped green chilies
2 fresh minced garlic cloves
1 large fresh chopped tomato
1 teaspoon oregano
1/2 teaspoon ground cumin
1/4 cup beef broth
Salt
Pepper

Directions:
Directions:
Heat oil in large pan over medium heat and sauté meat, onion, green chilies, garlic, and chopped tomatoes until onion becomes golden brown. Add oregano, cumin and beef broth. Reduce heat and simmer 10 minutes for flavors to blend. Test for seasoning and add salt and pepper to taste and serve with corn or flour tortillas. Also excellent with scrambled eggs.
