½ c. shortening
½ c. butter
1 c. sugar
2 eggs
½ tsp. vanilla
2 ½ c. flour
1 tsp. baking powder
1 tsp. salt

Filling:
2 c. raisins
¾ c. sugar
¾ c. water
½ c. chopped walnuts

Directions:
Directions:
In a small bowl, mix together flour, baking powder and salt. Set aside. Mix together first 5 ingredients, then stir in dry ingredients. Chill at least one hour. While dough is chilling, prepare filling as follows: Mix filling ingredients together and cook slowly until thickened – this is a slow process, but the mixture will eventually thicken.

Cut the dough in circles (any size you would like), and put cooked raisin mixture on a circle of dough and then place another circle of dough on top. Press with fingers or use fork to attach top to bottom. Don’t worry about over-filling them. They’re just as good with some of the filling coming out the sides! Dwight’s mom uses a large glass to cut her dough into circles, which makes about a dozen very large cookies.

Bake at 400º for 10-12 minutes, or longer depending on the size of your cookies.

I got this recipe from my new mother in law. The first time I tried these, I had no idea they were filled with such deliciousness inside! To say I was “pleasantly” surprised would be an enormous understatement! These are right up there with my mom’s Soft Sugar Cookies – and that is saying a lot!
