6-8 medium butter gold potatoes, peeled and sliced
1 medium onion, finely chopped
3 tablespoons butter
3 tablespoons flour
2 cups milk
1 cup heavy cream
1 8-oz package cream cheese, cubed for melting
2 tablespoons minced fresh parsley
2 teaspoons salt
1/2 teaspoon pepper

Preheat oven to 350º.

Place potatoes and onions in bowl large enough for mixing later.

In large saucepan, melt butter. Add flour and whisk together. Cook for about 1 minute. Then add milk and heavy cream; decrease heat to medium. Add salt, pepper, parsley and cubed cream cheese. Continue to cook until cream cheese is melted. Stir often to prevent scalding.

Add sauce to bowl of potatoes and onions and mix well. Transfer to casserole dish large enough to hold the mixture with at least one inch to top of dish (this will prevent sauce from boiling over and making a huge mess at the bottom of your oven). Bake covered for 1 hour 15 minutes, or until potatoes are done.
